Autumn ingredients from the forest

Late summer and autumn can bring chanterelles and other mushrooms to the forests around Ranua. Everyman's rights generally allow gathering wild mushrooms, subject to local restrictions and respect for private yards. Edibility still requires reliable identification.

Do not treat a mushroom as beginner-safe because it looks familiar. Use an expert when needed and never rely solely on an app. The recipe below is most straightforward with confidently identified chanterelles or shop-bought mushrooms.

Ingredients for two or three people

  • 300–400 g fresh chanterelles.
  • One small onion.
  • One tablespoon butter.
  • 100 ml cream or a suitable oat-based alternative.
  • Salt, pepper and, optionally, a little lemon juice.
  • Dill or parsley if available.
  • Small boiled or roasted potatoes to serve.

Method

  1. Clean the mushrooms carefully, removing soil and damaged parts, then cut larger pieces.
  2. Finely chop the onion and soften it in the butter.
  3. Add the mushrooms and cook until their released moisture evaporates and they are cooked through.
  4. Add the cream and season with salt, pepper and a little lemon if desired.
  5. Simmer to the consistency you prefer and scatter over the herbs.
  6. Serve with the potatoes.

The original suggests five to eight minutes for the initial frying stage. Treat that as an approximate stage, not a universal safe cooking time for every wild mushroom. Birch-associated and other boletes have species-specific preparation needs and must not be substituted without knowing them.

Other ways to serve it

The sauce also suits pasta, toasted rye bread or a piece of cooked salmon. Keep the recipe simple and use what you have.
